I bought dried mint at Zac’s deli. I love it. It is strong so a little will do. I’ve done this marinade for roast chicken twice already and I like it. The only problem is my chicken always turns out dry. I am not sure if it is the overcooking or the fact that I always use frozen chicken. I shall try using fresh chicken the next time.

In a large bowl, add olive oil, freshly minced garlic, dried mint, safflower (the cheaper version of saffron), salt, black pepper, a bit of freshly mixed ground spices (cumin, cinnamon, cardamom). Rub all over chicken and marinade overnight.
I forgot, a bit of paprika too.
Roast and serve.
