On the first weekend of Hari Raya, I made meatloaf and when one uncle came to visit, at least I could serve something other than cookies. I used the following in my meatloaf:

Peri-peri powder, smoked paprika, fine grained mustard, worchestershire sauce, ketchup, parsley flakes, onion powder, wheatgerm and grated carrot. Well, I have to up the nutrition level.


Into the minced meat they go together with one beaten egg to bind it all together. Mix all ingredients really well, oh and don’t forget to season with salt and then shape it into a log and then bake. Well, it may not look very appealing after baking but let me tell you the inside was moist. I would definitely make meatloaf again using another recipe.
