I love pumpkin soup. One day I bought half a pumpkin, cut it into cubes and then roasted them. I should have roasted the carrots too but I forgot. So in a pot, I sauteed garlic, one oinion, carrot slices and when softened, I added water and a vegetable stock cube. Then I added bay leaves and salt and black pepper. When all the flavours were awesome, I blended the whole thing with the roasted pumpkin and when smooth, added it back into the pot. Add some more water till it is the right consistency. Delicious. The first bowl was a bit thick but it was delicious eaten with crispy bread. Try it one day!
