Malay weddings will be incomplete without ayam masak merah. Or chicken in spicy tomatoey goodness. 

Sadly, at a funeral prayer for my late granduncle, my aunt, who’s specialty is this Ayam masak merah cooked it for the family guests. It was my late granduncle’s favourite. 

 There are many recipes for this dish and every family I suppose has their own secret spice blend and techniques. My aunt’s tasted just like you’d get at Malay weddings.
